Falafel Preparation

Soak Chickpeas
Place the dried chickpeas in a bowl and cover with water. Let soak overnight (at least 8 hours). Drain and rinse the chickpeas before using.

Make Falafel Mixture
In a food processor, combine the soaked chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, and pepper. Pulse until a coarse mixture forms. Do not over-process; it should be slightly grainy.

Shape Falafel
Using your hands, form the mixture into small balls or patties, about the size of a golf ball.

Prepare Pita
Warm the pita bread in a skillet or microwave for a few seconds until soft.

Assemble Gyros
On each pita, place a generous amount of lettuce, sliced tomato, cucumber, and red onion. Add 2-3 pieces of fried falafel on top and drizzle with tzatziki sauce.

Prepare Fries
Peel and cut the potatoes into fries. Rinse under cold water and pat dry.

Prepare Rice Pilaf
In a saucepan, melt the butter over medium heat. Add the rice and sauté until slightly translucent, about 2-3 minutes. Stir in chicken broth, salt, pepper, and bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed.
