Falafel Preparation

Soak Chickpeas
Soak the canned chickpeas in water for at least 1 hour or overnight if using dried chickpeas.

Make Falafel Mixture
In a food processor, combine soaked chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, black pepper, and flour. Process until a coarse mixture forms.

Form Falafel Balls
Shape the mixture into small balls or patties, approximately 1.5 inches in diameter.

Fry Falafel
Heat vegetable oil in a deep pan over medium heat. Fry the falafel in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Chill
Refrigerate the tzatziki sauce for at least 30 minutes to let the flavors meld.

Season Fries
Remove fries from oil and drain on paper towels. Sprinkle with salt to taste.
Gyro Assembly

Warm Pita
Warm the pita bread in a dry skillet or microwave for a few seconds to make it pliable.

Assemble Gyro
On each pita, layer falafel, sliced tomato, onion, and a generous dollop of tzatziki sauce. Fold the pita around the filling and serve immediately.
