Preparation of Fries

    Begin by cutting the potatoes into fry shapes. In a bowl, toss the cut potatoes with olive oil, salt, and black pepper until evenly coated.

    Preheat your oven to 425°F (220°C). Spread the seasoned fries on a baking sheet in a single layer. Bake for about 25-30 minutes, or until golden brown and crispy, flipping halfway through.

Assembling the Gyro

    While the fries are baking, prepare your vegetables. In a large bowl, combine the mixed greens, diced tomato, sliced cucumber, thinly sliced red onion, sliced black olives, and sliced green pepper. Toss gently to mix.
