Bake the Fries
Preheat your oven to 425°F (220°C). Spread the seasoned fries on a baking sheet in a single layer. Bake for about 25-30 minutes, or until golden brown and crispy, flipping halfway through.
Assembling the Gyro

Prepare the Vegetables
While the fries are baking, prepare your vegetables. In a large bowl, combine the mixed greens, diced tomato, sliced cucumber, thinly sliced red onion, sliced black olives, and sliced green pepper. Toss gently to mix.

Warm the Pita
Lightly warm the pita bread in a dry skillet over medium heat for about 1-2 minutes on each side until soft and pliable.

Fill the Pita
Once the fries are done and slightly cooled, take a warm pita and fill it with a generous amount of the mixed vegetable salad followed by a handful of the hand-cut fries.
