In a large mixing bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. Add flour, salt, and olive oil. Mix until a dough forms.

Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let rise in a warm area for 1 hour or until doubled in size.

Preheat the Wood-Fired Oven
Preheat the wood-fired oven to 700°F (370°C).

Shape the Pizza Base
Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion on a floured surface to your desired thickness.

Assemble the Pizza
Spread a thin layer of tomato sauce on each pizza base. Sprinkle shredded mozzarella cheese evenly, and top with artisan pepperoni slices.

Bake the Pizza
Carefully place the pizzas in the wood-fired oven and bake for about 2-3 minutes until the crust is golden brown and the cheese is bubbly.
