Prepare the Fish

Rinse the fish fillets under cold water and pat them dry with paper towels. Season both sides with salt, black pepper, and cayenne pepper.

In a shallow bowl, whisk together the flour, cornmeal, and a pinch of salt. In another bowl, beat the egg with milk.

Coat the Fish

Dip each fish fillet first into the egg mixture, allowing excess to drip off, then coat in the flour-cornmeal mixture. Press gently to adhere.
