Make the Dough
In a large mixing bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. Add flour, salt, and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until doubled in size.

Prepare the Sauce
In a saucepan, heat the crushed Roma tomatoes over medium heat. Season with salt and pepper to taste, and simmer for about 10 minutes.

Preheat the Oven
Preheat your wood-fired oven to about 800°F (427°C).

Shape the Pizza
Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion on a floured surface to your desired thickness.

Assemble the Pizza
Spread a generous amount of the tomato sauce over the crust, leaving a small border around the edges. Arrange the mozzarella slices evenly over the sauce. Sprinkle fresh basil leaves on top.

Bake the Pizza
Carefully transfer the pizza to the wood-fired oven. Bake for about 90 seconds to 2 minutes, or until the crust is golden and the cheese is bubbly.

Remove the pizza from the oven and let it cool for a minute. Slice and serve hot, garnished with black pepper and red pepper flakes to taste.
