In a medium bowl, toss the fresh strawberries with balsamic vinegar and granulated sugar. Let them marinate for at least 30 minutes to enhance their flavors.

Preheat the oven to 400°F (200°C). In a large bowl, whisk together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Stir in the heavy cream and vanilla extract until the dough comes together. Do not overmix.

Turn the dough onto a lightly floured surface and knead gently. Pat into a 1-inch thick round and cut into 8 wedges. Place on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden.

Once the shortcakes are cool, slice them in half horizontally. Spoon the marinated strawberries over the bottom half, top with whipped cream if desired, and replace the top half of the shortcake.
