    Make the Pie Crust

    In a large bowl, mix the flour, sugar, and salt. Add the softened butter and mix until the mixture resembles coarse crumbs. Stir in the ice water, a tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic wrap, and chill for 30 minutes.

    Pre-bake the Crust

    Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface and fit it into a tart pan. Prick the bottom with a fork and bake for 15-20 minutes or until golden. Let it cool completely.

    Prepare the Custard

    In a saucepan, heat the milk over medium heat until just boiling. In a separate bowl, whisk together the egg yolks, sugar, vanilla extract, and cornstarch. Slowly pour the hot milk into the egg mixture, whisking constantly. Return to the saucepan and cook over low heat, stirring until thickened. Remove from heat and let it cool slightly.

    Assemble the Tart

    Pour the custard into the cooled crust and spread evenly. Arrange the fresh fruit on top of the custard. Chill in the refrigerator for at least 1 hour before serving.
