1. Prepare the Filet Mignon
Season the filet mignon with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the filet mignon for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from heat and let rest.
2. Grill the Vegetables
In the same skillet, add another tablespoon of olive oil. Add the sliced onions and bell peppers, and sauté until they are tender and slightly charred, about 5-7 minutes.
3. Assemble the Wrap
Slice the rested filet mignon into thin strips. Lay a tortilla flat and place a portion of the grilled vegetables and filet strips in the center. Drizzle with horseradish sauce and sprinkle with fresh dill.
4. Wrap it Up
Fold the sides of the tortilla over the filling and roll tightly to enclose the filling. Repeat with the remaining tortillas.
5. Serve
Cut the wraps in half and serve immediately, optionally with extra horseradish sauce on the side.
