    Prepare the Bordelaise Sauce

    In a saucepan, combine red wine, chopped shallots, thyme, and bay leaf. Bring to a boil and reduce until the mixture is thickened, about 15-20 minutes.

    Finish the Sauce

    Add beef stock to the reduced wine mixture and simmer for another 10 minutes. Strain the sauce to remove solids and return to heat. Whisk in butter until melted and the sauce is glossy. Season with salt and pepper to taste.

    Cook the Filet

    Season the filet mignon with salt and black pepper. In a skillet, heat olive oil over medium-high heat. Sear the filets for 4-5 minutes on each side for medium-rare, or longer to your preferred doneness.

    Serve

    Remove filets from the skillet and let rest for 5 minutes. Serve with the bordelaise sauce drizzled over the top.
