Prepare the crust

Preheat the oven to 325°F (160°C). Melt the butter and combine it with the graham cracker crumbs. Press the mixture into the bottom of a 9-inch springform pan.

Make the filling

In a mixing bowl, beat together the cream cheese and sugar until smooth. Add vanilla and eggs, mixing until well combined.

Bake

Pour the filling over the crust and bake for 50-60 minutes, or until set. Allow to cool before topping with fresh strawberries.

Vera’s Lemon Cookies

In a bowl, cream together the butter and sugar. Add the egg, lemon zest, and lemon juice, mixing well. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture.

Bake the cookies

Drop tablespoons of dough onto a baking sheet and bake at 350°F (175°C) for 10-12 minutes or until edges are lightly golden.

Tiramisu

Prepare the mascarpone mixture

In a bowl, combine mascarpone cheese with sugar and vanilla. In another bowl, whip the heavy cream until stiff peaks form, then fold it into the mascarpone mixture.

Assemble the tiramisu

Dip ladyfingers briefly into espresso and layer them in a dish. Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer.

Chill and serve

Dust the top with cocoa powder and refrigerate for at least 4 hours before serving.
