Directions
Prepare the Cheese Mixture
In a mixing bowl, combine the cream cheese and goat cheese. Blend until smooth.
Add Cream and Seasonings
Slowly add the heavy cream, honey, fresh thyme, sea salt, and black pepper to the cheese mixture. Mix until fully incorporated.
Pour and Chill
Transfer the cheese mixture into a small baking dish or individual ramekins. Cover and refrigerate for at least 2 hours to set.
Brulee the Top
After chilling, sprinkle the granulated sugar evenly over the top of the cheese mixture. Use a kitchen torch to caramelize the sugar until golden brown. If you don't have a torch, you can place it under a broiler for a couple of minutes, watching closely to avoid burning.
Serve
Serve the Boat Cheese Brulee warm with slices of baguette for dipping.
