Fries Preparation

    Prepare the Potatoes

    Wash the russet potatoes thoroughly and peel them if desired. Cut the potatoes into even sticks, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and improve the crispiness.

    Dry the Potatoes

    Drain the soaked potatoes and pat them dry with paper towels to remove excess moisture.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Carefully add the dried potato sticks to the hot oil in batches, frying for about 5-6 minutes, or until they are golden brown and crispy.
