Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips to create shoestring fries. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked potato strips and pat them dry with paper towels. Carefully add a handful of the potato strips to the hot oil. Fry in batches to avoid overcrowding, for about 3-4 minutes or until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with sea salt and freshly ground black pepper to taste.
