Prime Rib

Method

Preparation

  1. 1

    Season the Prime Rib

Preheat your oven to 450°F (230°C). In a small bowl, mix together the kosher salt, black pepper, garlic powder, and onion powder. Rub the mixture all over the prime rib roast. Drizzle with olive oil and rub it in.

  2. 2

    Roast the Prime Rib

Place the seasoned prime rib in a roasting pan, bone side down. Roast in the preheated oven for 20 minutes. Then, reduce the oven temperature to 325°F (165°C) and continue to roast for about 1.5 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

  3. 3

    Rest and Prepare Au Jus

Remove the prime rib from the oven and let it rest for at least 20 minutes before carving. In the meantime, pour the beef broth into the roasting pan to deglaze, scraping up any browned bits from the bottom. Simmer on the stovetop to reduce slightly.

  4. 4

    Serve

Carve the prime rib into thick slices and serve with the au jus and horseradish cream sauce on the side. Enjoy with your choice of sides.
