Make the Mashed Potatoes
Add butter and heavy cream to the drained potatoes. Mash until creamy and smooth. Season with salt and pepper to taste. Keep warm.

Cook the Pork Chops
Season both sides of the pork chops with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Add the pork chops and cook for 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C). Remove from skillet and let rest.

Prepare the Brown Sugar Apples
In the same skillet, add the sliced apples and brown sugar. Cook over medium heat for about 5-7 minutes until the apples are tender and caramelized. Stir occasionally.

Assemble the Dish
On a plate, create a bed of creamy mashed potatoes, place the pork chop on top, and spoon the brown sugar apples over the chop. Serve immediately.
