Prepare the Cream Mixture
In a saucepan, combine the heavy cream, granulated sugar, and the seeds from the vanilla bean. Heat over medium heat until the mixture is hot but not boiling. Stir occasionally.

Whisk Egg Yolks
In a mixing bowl, whisk together the egg yolks and a pinch of salt until well combined and slightly thickened.

Combine Mixtures
Gradually pour the hot cream mixture into the egg yolks while whisking continuously to temper the yolks. Mix until smooth.

Bake in Ramekins
Preheat the oven to 325°F (160°C). Pour the custard mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake for about 30-35 minutes, or until the custard is set but slightly jiggly in the center.

Cool and Refrigerate
Remove the ramekins from the water bath and let them cool to room temperature. Once cooled, refrigerate for at least 2 hours or overnight.

Caramelize the Sugar
Before serving, sprinkle a thin layer of brown sugar over the custard. Using a kitchen torch, caramelize the sugar until it forms a crispy layer. Alternatively, place under a broiler for a few minutes, watching closely to avoid burning.

Let the creme brulee sit for a minute to allow the caramelized sugar to harden, then serve immediately.
