    Prepare the Cabbage

    Remove the outer leaves of the cabbage and cut it into quarters. Remove the core and slice it thinly.

    Brine Solution

    In a large bowl, dissolve salt and sugar in water. Add the sliced cabbage to the brine solution and let it sit for 30 minutes.

    Rinse and Drain

    After 30 minutes, rinse the cabbage thoroughly under cold water and drain well.

    Combine Ingredients

    In a large mixing bowl, combine the drained cabbage, cooked rice, minced garlic, and grated ginger. Mix well.

    Ferment

    Transfer the mixture to a clean glass jar, pressing down to eliminate air bubbles. Seal the jar loosely to allow gases to escape. Let it ferment at room temperature for 3-5 days.

    Check Fermentation

    Taste the cabbage after 3 days. If it has reached your desired level of fermentation, transfer it to the refrigerator to slow down the process.
