Marinate the Chicken
In a large bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken pieces, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.
Prepare the Coating
In another bowl, mix the flour, cayenne pepper, and a pinch of salt. This will be used to coat the chicken.
Heat the Oil
In a large, deep skillet or Dutch oven, heat the vegetable oil over medium-high heat. You can test if the oil is ready by dropping a small amount of flour into it; if it sizzles, it’s ready.
Coat the Chicken
Remove the chicken from the marinade, allowing excess buttermilk to drip off. Dredge each piece in the flour mixture, ensuring each piece is fully coated.
Fry the Chicken
Carefully place the coated chicken pieces into the hot oil, being careful not to overcrowd the pan. Fry for about 10-15 minutes per side or until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).
Drain and Serve
