Prepare the Marinade
In a large bowl, combine finely chopped lemongrass, minced garlic, fish sauce, brown sugar, and black pepper. Mix well.

Marinate the Beef
Add the beef rib fingers to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Grill
Preheat the grill to medium-high heat and lightly oil the grates to prevent sticking.

Grill the Beef
Remove the beef from the marinade and grill for about 5-7 minutes on each side, or until cooked to your desired doneness.

While the beef is grilling, combine the toasted rice powder, pickled shallots, cilantro, mint leaves, and Thai basil in a bowl.

Slice the grilled beef and serve with the herb medley and toasted rice powder on the side. Enjoy with jaew som sauce.
