    Marinate the Ribs

    In a large bowl, mix together the finely chopped lemongrass, minced garlic, fish sauce, sugar, and black pepper. Add the pork spare ribs and coat them well with the marinade. Cover and let marinate in the refrigerator for at least 2 hours, preferably overnight.

    Heat the Oil

    In a deep frying pan or large pot, heat enough vegetable oil over medium-high heat until it reaches about 350°F (175°C).

    Fry the Ribs

    Carefully add the marinated pork spare ribs to the hot oil in batches, avoiding overcrowding the pan. Fry until the ribs are golden brown and crispy, about 8-10 minutes. Use a slotted spoon to transfer the fried ribs to a paper towel-lined plate to drain excess oil.

    Serve

    Serve the fried pork spare ribs hot with jaew som (a dipping sauce made with tamarind, chili, and other spices) on the side.
