1. Prepare the Steak
Season the steaks generously with salt and crush the black peppercorns using a mortar and pestle or a rolling pin. Press the crushed pepper onto both sides of the steaks.
2. Sear the Steak
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Remove the steaks from the skillet and let them rest on a plate.
3. Make the Sauce
In the same skillet, add the butter and minced shallots. Sauté for about 2-3 minutes until the shallots are translucent. Carefully add the cognac (be cautious as it may flame up) and scrape the bottom of the pan to deglaze.
4. Finish the Sauce
Once the cognac has reduced by half, stir in the heavy cream and simmer for another 2-3 minutes until the sauce thickens. Adjust seasoning with salt if necessary.
5. Serve
Slice the steaks and arrange them on plates. Spoon the sauce over the steaks and serve immediately.
