Prepare the Beans

If using dried white beans, soak them overnight in water. Drain and rinse before cooking.

Sauté Aromatics

In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, and celery. Sauté until softened, about 5-7 minutes.

Add Garlic and Tasso Ham

Stir in minced garlic and tasso ham. Cook for an additional 2-3 minutes until fragrant.

Combine Ingredients

Add the soaked white beans, chicken broth, bay leaves, thyme, black pepper, and salt to the pot. Stir well.

Simmer the Soup

Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beans are tender.

Adjust Seasoning

Taste and adjust seasoning with additional salt and pepper if necessary. Remove bay leaves before serving.
