Cook the Pasta

Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Drain and set aside.

Prepare the Sauce

In a large skillet, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté for about 5 minutes until the vegetables are softened.

Add Garlic and Tomatoes

Stir in the minced garlic and cook for an additional minute. Add the canned diced tomatoes, tomato paste, and creole seasoning. Mix well and simmer for 10 minutes.

Cook the Shrimp or Crawfish

Add the shrimp or crawfish tails to the skillet. Cook for 5-7 minutes or until the seafood is cooked through. Season with salt and black pepper to taste.

Combine Pasta and Sauce

Add the cooked pasta to the skillet, tossing to coat with the sauce. Remove from heat and stir in the chopped parsley and grated Parmesan cheese.

Serve

Serve hot, garnished with additional parsley and Parmesan if desired.
