Preparation and Assembly
Marinate the Shrimp
In a bowl, combine the shrimp, olive oil, garlic powder, paprika, cayenne pepper, salt, and black pepper. Toss to coat the shrimp evenly and let marinate for 15 minutes.
Make the Remoulade Sauce
In another bowl, mix together the mayonnaise, Dijon mustard, lemon juice, and hot sauce. Adjust seasoning to taste and set aside.
Assemble the Po-Boy
Slice the baguette or hoagie roll in half. Spread a generous amount of the remoulade sauce on both sides. Place grilled shrimp inside, add lettuce and tomato slices, then close the sandwich.
Serve
Cut the po-boy in half if desired and serve immediately with extra remoulade sauce on the side.
