Prepare the Ribeye

Heat olive oil in a skillet over medium-high heat. Season the ribeye with salt and black pepper, then sear it in the skillet for about 2-3 minutes on each side until browned. Remove from heat and let it rest.

Cook the Filling

In the same skillet, add chopped onion and minced garlic. Sauté until onions are translucent. Chop the rested ribeye into small pieces and add it back to the skillet, along with beef broth and Worcestershire sauce. Simmer for 10-15 minutes until the mixture thickens. Stir in crumbled blue cheese until melted.

Prepare the Pastry

Preheat the oven to 400°F (200°C). Roll out the puff pastry sheets and cut them into circles or squares, depending on your preference.

Assemble the Meat Pies

Place a spoonful of the ribeye filling in the center of each pastry piece. Fold over and seal the edges using a fork. Brush the tops with beaten egg.
