Shucking the Oysters
Using a proper oyster knife, carefully insert the knife into the hinge of the oyster and twist to open. Slide the knife along the top shell to cut the muscle, then remove the top shell. Gently detach the oyster from the bottom shell, being careful not to spill the liquor.

Arrange the freshly shucked oysters on a platter with crushed ice. Serve with lemon wedges, cocktail sauce, hot sauce, and fresh horseradish on the side.
