Prepare the Ingredients

Cook the Tortellini

In a large pot of salted boiling water, add the tri color cheese tortellini and cook according to package instructions until al dente. Drain and set aside.

Cook the Sausage

In a large skillet over medium heat, add the sweet Italian sausage. Cook, breaking it apart with a spatula, until browned and fully cooked, about 5-7 minutes. Remove from the skillet and set aside.

Sauté the Vegetables

In the same skillet, add olive oil. Add the sliced mushrooms and cook until they are golden brown, about 5 minutes. Then, add minced garlic and cook for another minute until fragrant.

Combine Ingredients for Sauce

Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese until melted and creamy. Season with salt and black pepper to taste.

Combine and Serve

Mix Everything Together

Return the cooked sausage to the skillet along with the cooked tortellini. Add the chopped parsley and gently toss everything together until well combined and heated through.
