Cooking Instructions

  1. 1

    Prepare the Base

In a large pot, heat olive oil over medium heat. Add diced Vidalia onion, celery, and bell peppers. Sauté until softened, about 5-7 minutes.

  2. 2

    Add Garlic and Sausage

Stir in minced garlic and sliced Andouille sausage. Cook for an additional 2-3 minutes until fragrant.

  3. 3

    Incorporate Duck and Spices

Add the smoked duck breast, Cajun seasoning, diced tomatoes, and okra. Stir well to combine.

  4. 4

    Add Broth and Simmer

Pour in the chicken broth. Bring to a boil, then reduce heat and let it simmer for 30 minutes. Season with salt and black pepper to taste.

  5. 5

    Cook the Rice

While the gumbo simmers, rinse the white rice under cold water. In a separate pot, combine rinsed rice and water. Bring to a boil, then cover and reduce heat to low. Cook for 15-20 minutes until rice is tender.

  6. 6

    Serve

Serve the gumbo hot over a bed of seasoned white rice. Enjoy!
