Marinate the Chicken
In a bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare the Breading
In a shallow dish, mix the all-purpose flour and cornstarch together. This will be used to coat the chicken.
Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 175°C (350°F).
Bread the Chicken
Remove the chicken from the marinade, allowing excess buttermilk to drip off. Dredge each piece in the flour-cornstarch mixture, pressing gently to adhere. Shake off any excess flour.
Fry the Chicken
Carefully place the breaded chicken pieces into the hot oil. Fry in batches if necessary, cooking for about 5-7 minutes per side or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 75°C (165°F).
Assemble the Sliders
Once fried, place the crispy chicken on the mini slider buns. Add a pickle slice and a dollop of mayonnaise on each slider.
