Prepare the Bacon
In a skillet over medium heat, cook the hickory smoked bacon until crispy. Remove and drain on paper towels.

Melt the Cheese
During the last minute of cooking, top each burger with a generous scoop of pimento cheese and cover to allow the cheese to melt.

Toast the Buns
While the burgers are cooking, toast the brioche buns on the grill or in a toaster until golden brown.

Assemble the Burgers
Spread basil mayo on the bottom half of each toasted bun. Place the burger patty with melted pimento cheese on top. Add crispy bacon and a handful of fried onion strings. Top with the other half of the bun.

Serve the burgers hot with your favorite side dishes.
