    Prepare the Dough

    In a large mixing bowl, combine all-purpose flour, whole wheat flour, sugar, salt, and dried herbs. In a separate bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until frothy. Add the yeast mixture and olive oil to the dry ingredients, and mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. If the dough is sticky, add more flour as needed.

    First Rise

    Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Loaves

    Once risen, punch down the dough and divide it into three equal portions. Shape each portion into a loaf or round shape and place on a baking sheet lined with parchment paper.

    Cover the shaped loaves with a damp cloth and let them rise for another 30 minutes.

    Preheat your oven to 375°F (190°C).

    Before baking, gently brush the tops of the loaves with olive oil and sprinkle sesame seeds on top. Bake in the preheated oven for 25-30 minutes, or until golden brown and hollow-sounding when tapped.
