Prepare the Meatloaf
Preheat the oven to 350°F (175°C). In a large bowl, combine ground beef, ground pork, bread crumbs, eggs, chopped onion, minced garlic, Worcestershire sauce, salt, and black pepper. Mix well until combined.

Wrap with Bacon
Shape the meat mixture into a loaf and wrap the bacon slices around it, ensuring it's fully covered. Place the meatloaf in a baking dish.

Bake the Meatloaf
Bake in the preheated oven for about 1 hour or until the internal temperature reaches 160°F (70°C).

Make the Glaze
While the meatloaf is baking, prepare the bourbon-brown sugar tomato glaze. In a small saucepan, combine brown sugar, ketchup, and bourbon. Heat over medium heat until the mixture is smooth and slightly thickened, about 5-10 minutes.

Assemble the Sandwich
Once the meatloaf is done, let it rest for 10 minutes before slicing. Toast the sourdough bread slices. Place two slices of meatloaf on one slice of toasted sourdough, drizzle with the bourbon-brown sugar glaze, and top with another slice of toasted sourdough.

Cut the sandwich in half and serve warm.
