Preparation

    Prepare the Meatloaf

    Preheat the oven to 350°F (175°C). In a large bowl, combine ground beef, ground pork, bread crumbs, egg, chopped onion, minced garlic, salt, black pepper, and parsley. Mix until well combined.

    Wrap with Bacon

    Shape the meat mixture into a loaf shape and wrap the bacon slices around it, making sure to cover as much of the surface as possible. Place the wrapped meatloaf in a baking dish.

    Make the Glaze

    In a small saucepan, combine brown sugar, ketchup, bourbon, and Worcestershire sauce. Cook over medium heat until the sugar dissolves and the mixture is well combined.

    Glaze the Meatloaf

    Brush half of the glaze over the meatloaf. Bake in the preheated oven for 1 hour. Brush the remaining glaze over the meatloaf in the last 15 minutes of cooking.

    Prepare Garlic Mashed Potatoes

    While the meatloaf is baking, boil the chopped potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter, milk, and garlic, then mash until smooth. Season with salt and pepper to taste.

    Sauté the Vegetables

    In a separate pan, heat olive oil over medium heat. Add mixed vegetables and sauté until heated through and slightly tender, about 5-7 minutes. Season with salt and pepper to taste.

    Serve

    Once the meatloaf is cooked through (internal temperature should be 160°F / 70°C), let it rest for 10 minutes before slicing. Serve with garlic mashed potatoes and sautéed vegetables.
