Preparation
1. Prepare the Chicken
In a large pot, bring the chicken stock to a simmer. Add the shredded chicken breast and cook for about 15-20 minutes until heated through. Season with salt and pepper to taste.
2. Make the Dumpling Batter
In a mixing bowl, combine the all-purpose flour, baking powder, salt, milk, and melted butter. Mix until just combined.
3. Drop the Dumplings
Using a spoon, drop the dumpling batter into the simmering chicken stock. Cover the pot and let the dumplings cook for about 15 minutes without lifting the lid.
4. Prepare the Corn Muffins
In another bowl, mix cornmeal, sugar, baking soda, salt, milk, egg, and melted butter until smooth. Pour into a greased muffin tin and bake at 400°F (200°C) for 15-20 minutes until golden.
5. Serve
Once the dumplings are cooked and the muffins are baked, serve the chicken and dumplings hot with a corn muffin on the side.
