Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture.

Dredging Station
In one bowl, combine the flour, salt, and black pepper. In another bowl, pour the buttermilk. In a third bowl, place the cornmeal.

Coat the Tomatoes
Dip each tomato slice first in the flour mixture, then in the buttermilk, and finally coat with cornmeal.

Fry the Tomatoes
In a large skillet, heat the vegetable oil over medium-high heat. Fry the coated tomato slices in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

Assemble the Dish
Place the fried green tomatoes on a serving plate. Top each slice with a generous spoonful of pimento cheese and sprinkle with crumbled bacon.
