Fried Green Tomato Croutons

Method

Preparing the Salad

    Prepare the Greens

    In a large bowl, toss the baby greens with balsamic vinaigrette until evenly coated. Set aside.

Making the Fried Green Tomato Croutons

    Prepare the Tomatoes

    Slice the green tomatoes into 1/4 inch thick rounds.

    Breading the Tomatoes

    In a bowl, whisk together the egg and milk. In another bowl, combine the cornmeal, flour, salt, and black pepper. Dip each tomato slice first into the egg mixture, then coat with the cornmeal mixture.

    Frying

    Heat oil in a deep skillet over medium-high heat. Fry the breaded tomato slices until golden brown, about 2-3 minutes per side. Drain on paper towels.

Preparing the Roasted Pepper Coulis

    Making the Coulis

    In a blender, combine the roasted red pepper, olive oil, minced garlic, salt, and black pepper. Blend until smooth. Adjust seasoning to taste.

Assembling the Salad

    Combine and Serve

    On a large serving platter, arrange the balsamic-dressed baby greens. Top with fried green tomato croutons and sprinkle with crumbled feta. Drizzle the roasted pepper coulis over the top.
