Marinate the Chicken
In a bowl, combine the buttermilk, salt, pepper, paprika, and garlic powder. Add the chicken breasts, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 1 hour.

Prepare the Waffle Batter
In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, sugar, and salt. In another bowl, whisk the eggs, milk, vegetable oil, red food coloring, and vanilla extract until smooth. Combine the wet and dry ingredients, mixing until just combined.

Fry the Chicken
Heat oil in a deep skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. In a separate bowl, mix the flour and cornstarch. Dredge the chicken in the flour mixture, ensuring an even coating. Carefully place the chicken in the hot oil and fry until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.

Cook the Waffles
Preheat a waffle iron. Pour an appropriate amount of batter into the hot waffle iron and cook according to the manufacturer's instructions until golden and crisp. Repeat with remaining batter.

Make the Cinnamon Cream Drizzle
In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and ground cinnamon, continuing to whip until stiff peaks form.

Plate the waffles and top with the fried chicken. Drizzle with maple syrup and cinnamon cream drizzle. Serve immediately.
