    Soak the Beans

    Rinse the dried navy beans under cold water and remove any debris. Place the beans in a large bowl and cover with water. Soak overnight or for at least 8 hours. Drain and rinse the beans before cooking.

    Cook the Beans

    In a large pot, add the soaked beans and 4 cups of water. Bring to a boil, then reduce heat and simmer for about 1 hour or until the beans are tender. Drain and set aside.

    Prepare the Bacon and Onion

    In a large skillet, cook the diced bacon over medium heat until crispy. Add the chopped onion and sauté until translucent, about 5 minutes.

    Combine Ingredients

    In a large mixing bowl, combine the cooked beans, bacon and onion mixture, brown sugar, molasses, ketchup, Dijon mustard, apple cider vinegar, salt, and black pepper. Mix well.

    Bake the Beans

    Preheat the oven to 300°F (150°C). Transfer the bean mixture to a baking dish, cover with foil, and bake for 2 to 3 hours, stirring occasionally, until thickened and bubbly.
