Roasting Chicory Root

Preheat your oven to 350°F (175°C). Spread the chicory root evenly on a baking sheet and roast for about 30 minutes, stirring occasionally, until it is dark brown and fragrant.

Let the roasted chicory cool down for a few minutes, then grind it using a coffee grinder until it reaches a fine powder consistency.

Brewing the Coffee

In a large pot, bring the water to a boil. Add the ground chicory and coffee grounds to the boiling water. Stir well and reduce the heat to low. Let it simmer for about 15 minutes.

Straining the Coffee

After simmering, remove the pot from heat and strain the mixture through a fine mesh sieve or coffee filter into a serving pot to separate the liquid from the grounds.
