Method
Cooking Pasta and Seafood
Cook the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.
Sauté Seafood
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add scallops, shrimp, mussels, and fish. Cook until seafood is just cooked through, about 4-5 minutes.
Add Sundried Tomatoes
Stir in the chopped sundried tomatoes and cook for an additional 2 minutes.
Making the Sauce
Prepare the Cream Sauce
In a separate saucepan, heat heavy cream over medium heat. Stir in grated Parmesan cheese, salt, and black pepper. Cook until the cheese is melted and the sauce is smooth.
Combining Everything
Combine and Serve
Add the cooked spaghetti to the skillet with the seafood and sundried tomatoes. Pour the Parmesan cream sauce over the pasta and toss gently to combine. Garnish with fresh parsley before serving.
