1. Prepare the Churro Dough
In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and stir in flour until a ball forms. Let cool for 5 minutes.

Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
3. Heat the Oil
In a deep pot, heat the vegetable oil to 350°F (175°C).
4. Fry the Churros
Transfer dough to a piping bag fitted with a star tip. Pipe strips of dough into the hot oil, cutting them to desired length. Fry until golden brown, about 2-3 minutes on each side. Drain on paper towels.
5. Coat with Sugar
Mix granulated sugar and cinnamon in a bowl. Roll hot churros in the sugar mixture until fully coated.

In a medium saucepan, whisk together cocoa powder, sugar, cornstarch, and salt until well combined.
7. Heat the Milk
Slowly add the milk to the dry ingredients, whisking constantly to avoid lumps. Heat the mixture over medium heat until it begins to thicken and simmers, stirring frequently.
8. Finish the Hot Chocolate
Remove from heat and stir in vanilla extract. Serve hot alongside the churros.
