Prepare the Filling
In a large mixing bowl, combine the shredded mesquite chicken, Monterey Jack cheese, diced jalapeños, and diced onion. Mix well to ensure all ingredients are evenly distributed.

Roll the Egg Rolls
Lay a tortilla flat on a clean surface. Place about 1/3 cup of the chicken mixture in the center of the tortilla. Fold the sides over the filling, then roll the tortilla tightly from the bottom up to form an egg roll. Repeat with the remaining tortillas and filling.

In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
