Prepare the Chips
Wash and thinly slice the Russet potatoes. Rinse the slices to remove excess starch, then pat them dry with paper towels.

Fry the Chips
In a large pot, heat the vegetable oil over medium heat. Once hot, carefully add the potato slices in batches, frying until golden and crispy, about 3-4 minutes. Remove and drain on paper towels, then sprinkle with salt.

Make the Cheese Sauce
In a saucepan over medium heat, combine cream cheese, cheddar cheese, queso blanco, milk, garlic powder, onion powder, and cayenne pepper. Stir until melted and smooth, about 5 minutes.

Assemble the Dish
On a serving platter, layer the crispy kettle chips. Pour the cheese sauce generously over the chips, then top with crumbled bacon, sliced jalapeños, blue cheese crumbles, and diced tomatoes.
