Preparation

1

Prepare the crust

Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.

2

Make the filling

In a large bowl, beat the softened cream cheese until smooth. Gradually add the sugar and mix until well blended. Add the sour cream, and mix thoroughly. Add the eggs one at a time, mixing well after each addition. Stir in the orange juice, lemon juice, lime juice, and zests until smooth.

3

Bake the cheesecake

Pour the filling into the cooled crust and smooth the top. Bake in the preheated oven for 55-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

4

Chill and serve

Remove the cheesecake from the oven and let it cool completely at room temperature. Refrigerate for at least 4 hours, preferably overnight. Before serving, top with whipped cream and garnish with citrus slices.
