Method
Preparation of Marinade
Make the Marinade
In a large bowl, combine the red wine vinegar, minced garlic, cumin powder, paprika, aji panca paste, olive oil, salt, and black pepper. Whisk together until well mixed.
Marinating the Beef

Add the beef heart cubes to the marinade. Toss to ensure all pieces are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

After marinating, take the soaked wooden skewers and thread the marinated beef heart cubes, alternating with pieces of red bell pepper and red onion. Be sure to leave some space between the pieces for even cooking.

In a small bowl, mix the aji amarillo paste, lime juice, and salt to taste. This sauce can be served alongside the skewers for dipping.
