Preparation
Prepare the Lucuma Pulp
If using fresh lucuma, slice the fruit in half and scoop out the flesh. If using frozen lucuma pulp, allow it to thaw.
Blend the Base
In a blender, combine the lucuma pulp, heavy cream, sweetened condensed milk, whole milk, vanilla extract, and a pinch of salt. Blend until smooth and fully combined.
Chill the Mixture
Transfer the mixture to a bowl and cover it with plastic wrap. Refrigerate for at least 2 hours to chill thoroughly.
Churn the Ice Cream
Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze the Ice Cream
Transfer the churned ice cream to an airtight container. Smooth the top with a spatula and freeze for at least 4 hours or until firm.
Serve
Scoop the helado de lucuma into bowls or cones and enjoy this creamy Peruvian delicacy!
