1. Wash and Cut Potatoes
Wash the russet potatoes under cold water to remove any dirt. Peel the potatoes if desired, then cut them into evenly sized strips, about 1/4 inch thick.
2. Soak Potatoes
Place the cut potato strips in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

3. Preheat Oil
In a large, heavy-bottomed pot or deep fryer, add vegetable oil and heat it to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature.
4. Dry Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.
5. Fry Potatoes
Carefully add a small batch of dried potato strips into the hot oil. Avoid overcrowding the pot. Fry for about 5-7 minutes or until golden brown and crispy.
6. Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to absorb excess oil. While still hot, sprinkle with salt, black pepper, and garlic powder to taste.
7. Repeat
Repeat the frying process with the remaining potato strips until all are cooked. Make sure to wait for the oil to return to temperature between batches.

8. Serve Hot
Serve the fries hot, optionally with your favorite dipping sauces like ketchup or mayonnaise.
