    Marinate the Pork

    In a bowl, mix together the ancho chili powder, guajillo chili powder, cumin, oregano, minced garlic, salt, and black pepper. Rub this mixture all over the pork shoulder, ensuring it is well coated. Cover and refrigerate for a minimum of 12 hours, preferably overnight.

    Cook the Pork

    Preheat the grill to medium-high heat. Remove the pork from the refrigerator and let it sit at room temperature for 30 minutes. Grill the pork for about 25-30 minutes, turning occasionally, until it reaches an internal temperature of 145°F (63°C). Let the pork rest for 10 minutes before slicing it thinly.

    Grill the Pineapple

    While the pork is resting, grill the pineapple slices for about 3-4 minutes on each side until caramelized. Remove from the grill and chop into small pieces.

    Prepare the Tacos

    Warm the corn tortillas on the grill for about 30 seconds on each side. Assemble the tacos by placing a portion of sliced pork on each tortilla, adding diced onions, grilled pineapple, and chopped cilantro. Drizzle with lime juice and top with mild salsa verde.
