    Prepare the Caramel

    In a saucepan over medium heat, combine granulated sugar and water. Stir gently until the sugar dissolves and turns a golden brown color. Quickly pour the caramel into a round baking dish, tilting to coat the bottom evenly. Set aside to cool and harden.

    Blend the Flan Mixture

    In a blender, combine sweetened condensed milk, evaporated milk, eggs, and vanilla extract. Blend until smooth and well combined.

    Bake the Flan

    Pour the flan mixture over the hardened caramel in the baking dish. Place the baking dish in a larger baking pan filled with hot water (water bath). Bake in a preheated oven at 350°F (175°C) for about 50-60 minutes, or until a knife inserted in the center comes out clean.

    Cool and Serve

    Remove the flan from the water bath and let it cool to room temperature. Chill in the refrigerator for at least 4 hours or overnight. To serve, run a knife around the edges of the flan, invert onto a serving plate, and serve with lemon sorbet on the side.
